Hello friend! How are you doing? Today I have a recipe for soft, gooey vegan and gluten free banana blondies to share with you. They’re SO EASY to make, so no excuses. You have to whip up a batch!
With the weather heating up around here, my homemade vegan ice cream sandwiches have been on the menu as well! We enjoyed a few seriously hot days here in Victoria BC in the last week. It has since cooled a little but my mind is fixed on ice cream and summer related desserts.

I’ve usually been doing them on Saturdays but do check into my account to see exactly when and what I will be making (I always announce in my stories and in a post). I also take viewers suggestions so let me know if you have them. I love doing the videos in live time and being able to connect with people (since you can comment along the way). I really miss teaching cooking classes at the cooking school and can’t wait to get back to that but for now, its live recipe videos.

Clearly I’ve been on a banana kick! haha. Just like everyone else, I’ve been doing a lot of quarantine baking which included banana bread, but I thought I’d switch it up with my banana blondies and donuts.
So lets get to the blondie recipe, shall we?!
What is a blondie?! It’s simply a brownie without the cacao powder, making it lighter in colour but has the same dense, soft, slightly gooey texture. REALLY yummy!!!!
Oh and in my first photo in the post, I drizzled the blondies with peanut butter and extra chocolate chips. It takes them over the top!
Vegan – Gluten Free – Nut Free Option
3/4 cup brown rice flour
1/2 cup coconut sugar
1/4 cup tapioca flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup mashed ripe banana
3 tablespoons almond or coconut milk
1/4 cup nut or seed butter
1/4 cup melted coconut oil
1 teaspoon vanilla extract
2/3 cup dark chocolate chips
Preheat an oven to 350F and grease the bottom of an 8×8″ pan. Whisk the dry ingredients together. In a separate bowl, whisk the wet ingredients together. Add the wet to the dry and stir until completely combined. Pour the batter into the pan. Bake for 27-30 minutes or until a toothpick comes out clean. Let cool completely before cutting. Store at room temperature for up to 4 days OR freeze (do not keep them in the fridge).
