Cake Mix Pumpkin Cookies

I also love how customizable cake mix recipes are. Swap out the flavors and make lots of Pumpkin Cookie variations (imagine: chocolate, butter pecan, spice…)!

Ingredients

  • 1 box cake mix 
  • 15 ounce can pumpkin purée
  • 1 cup chocolate chips
  • Optional: 1 tsp pumpkin pie spice (omit if using a spice cake mix)

3-ingredient Pumpkin Chocolate Chip Cookie Recipe

Directions

  1. Preheat oven to 350ºF.
  2. Mix together the cake mix, pumpkin purée, and if desired: pumpkin pie spice and chocolate chips.
  3. Scoop the dough onto an ungreased cookie sheet. Flatten slightly with your palm (wet your fingers to keep the dough from sticking to your hands). Repeat with the remaining dough, placing the dough 2 inches apart on the cookie sheet.
  4. Press a few chocolate chips onto the top of each cookie.
  5. Bake for 15 minutes. Transfer to a wire rack for cooling.
