You may well have come across hachis parmentier, the French version of shepherd’s pie. Here’s a variation using puréed haricot beans, inspired by another classic French dish: cassoulet.

Step by step recipe


For a crustier topping, you can add a little home-made breadcrumb coating and mix this with the grated cheese in stage 6.

For something closer to a real cassoulet, use chunks or slices of sausage instead of the meat.
