What’s not to love about a fully loaded Ranch Potato Salad filled with bits of bacon and clods of egg? This impressive tossed salad has been my babies’ favorite tossed salad for over two years now.
This is an easy waldorf salad with bacon and egg that I know you’ll desire as much as we do.

They were almost begging me to make a potato salad. I won’t claim that the bacon was leftover, I cooked it fresh. Who ever heard of leftover bacon ?!
Even with cooking the bacon, this recipe came together so easily that I instant knew it would be one that would be showing up a great deal on our lunch menus. This recipe proliferates beautifully. I typically double or triple it for get togethers with friends. I’ve provided it to batch of patrons, drew it to potlucks, and met it as a dinner place dish and it’s a punch every time.
Potato salad with Bacon and Egg
When I decided to make a ranch waldorf salad that first time, my knowledge immediately turned to bacon.
I wanted a salad with the flavors of ranch dressing, but too with some smokiness from the bacon. I exerted simply a little of the bacon grease to season the costume and the whole salad picked up a somewhat smoky flavor that I loved.
Using leftover hardboiled eggs and baked potatoes made this recipe come together speedily. Rather than abusing a storebought or pre-made ranch gown, I made an extra thick dressing with mayonnaise and all the usual ranch seasoning believes like dill and parsley.
Every bite of this potato salad was peaches-and-cream and full of smoky bacon and herbed ranch flavor. Fresh green onions flung in at the end included a marvelous burn and slaking crunch to the salad.
Don’t be scared of the bacon grease, it makes an enormous divergence in the end result. It’s just a small amount and takes this from an ordinarily good potato salad to something that tastes better than any potato salad I’ve had from a eatery or deli.
It emphatically blows the store-bought stuff entirely out of the water.

Can there be a perfect potato salad? If so, this is it. I learnt myself snacking on this all afternoon that first time I offset it. Every time I strolled through the kitchen, a crotch been able to find its practice into my hands as I opened and closed the fridge, only to “test” this recipe one more time.
I’m lucky that there was enough left for our dinner!
Since the first time I made this ranch tossed salad, I’ve acted it as a back saucer to countless main dishes. We adoration it with Crunchy Baked Chicken and Filthy Burgers but also it’s hearty and filling enough to serve as a lunch or light dinner all on its own.
And yes, I still find myself sidling bites of it whenever I have leftovers in the fridge.
This potato salad doesn’t need to wait or wintry prior to being dished. The flavors of everything come together perfectly right away and it’s best sufficed fresh. I’ve also collected it in the refrigerator for a few hours or up to a day before helping and it’s still tasted fantastic.
Be prepared for everyone to ask you for your recipe when you producing this to a potluck. Everyone is always blown away by this combining of tender potatoes, milky ranch, and smoky bacon.
