Upside down pineapple slice

What a year this January has been!

I saw this on instagram the other day and “ve felt it” 100%. It’s been busy, it’s been good, crazy good actually, full of unexpected slants and turns and wonderful bombshells. Gotta adoration good bombshells!

I made this pineapple slice back in December and had zero time to post it. Til now. Not that I have season now, but I’m squeezing it in between finishing labor and building dinner.

It’s beautiful, it’s yum, it’s glowing and summery. And let’s got to get it without further ado, because I really really should get going prep dinner.

Upside down pineapple slice Perform 10 -1 2 Ingredients 1 tsp coconut oil 1 TBSP+ 50 g coconut sugar 1 psyllium egg uttered with 1 tsp psyllium+ 6 TBSP water 200g coconut yogurt 100g immediate cook oats 100g dessicated coconut 1/2 tsp bicarbonate of soda+ 1 tsp apple cider vinegar zest and liquor of 1 lime 1 goblet spray 1/2 ripe pineapple

Ingredients for frosting and decorating

1 TBSP coconut yogurt 1 TBSP molasses 1 TBSP maple syrup

Steps

Preheat the oven to180C and front a tray with roasting paper.

Brush a small pan with the coconut lubricant and disperse 1 TBSP coconut sugar. Cut the pineapple into wedges and place on the bottom of the pan. Set aside. Contribute the 50 g coconut sugar and coconut yogurt to a big bowl and scoot to combine for about 1 minute. Lend the oats, dessicated coconut and lime zest and mingle until you get a soft lettuce. Supplement the psyllium and irrigate to a small bowl and mingle for 30 seconds. Then add to the dough. Lend the baking soda and vinegar to the dough, computed the water and lime liquor and assortment to combine everything. Run and spread this onto the pineapple slivers. Roast for about 40 hours or until golden chocolate-brown on the outside. To perform the frosting, simply add all the ingredients to a small bowl and whisk. When the slice are ready, allow it to cool, then neighbourhood a chopping board on top of the go and flip-flop it. Gently remove the pan and then cut into squares. Frost and decorate the slicings and suffice. They are best fresh but will previous well for 3 periods.
