Crazy Cake, also known as Wacky Cake or Depression Cake, is made without any butter, eggs, or milk. These cakes became popular during the depression when eggs and dairy were hard to come by, and they stuck around because the recipe is such a good one. It’s quick, easy, and produces a delicious cake with a moist, tender crumb.
What’s in Vanilla Crazy Cake?
- all purpose flour
- granulated sugar
- baking soda
- white vinegar
- vanilla extract
- vegetable oil
How to Make this Recipe (Step-by-Step)
1. Whisk together the dry ingredients.
Use the handle of the whisk to create three depressions in the flour mixture (two small ones and a big one).
2. Vanilla, vinegar, and oil.
Pour the vanilla and the vinegar in the small depressions, and pour the oil into the large one.
3. Add water and whisk until smooth.
4. Pour batter into greased baking dish.
5. Bake it and frost it!
Spread your favorite vanilla (or cream cheese!) frosting on top of the cake while it’s still warm. Enjoy!
